I don’t get people who don’t like peanut butter.


Honestly, there is nothing more satisfying than eating a nice big spoonful of the stuff. And the best part about peanut butter (a.k.a. the best food on the planet) is that it’s healthy!

Peanut butter does contain a substantial amount of fat and calories, which might deter the uneducated eye, but the fats are healthy, in moderation!

Healthy Peanut Butter Chocolate Chip Cookies


Gosh, these cookies are good. They’re crunchy on the outside and chewy on the inside, chock full of healthy fats in addition to antioxidants from the dark chocolate, quick and easy to make, and basically a cookie-lover’s dream.

Healthy Peanut Butter Chocolate Chip Cookies

Prep time: 15 minutes

Cook time: 10 minutes

Yield: 40 cookies

Cookie Ingredients:

  • 1/2 cup creamy peanut butter
  • 3 tablespoons canola oil or vegetable oil
  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 1/2 teaspoons pure vanilla extract
  • 1 egg at room temperature
  • 1 cup whole wheat flour
  • 2 tablespoons ground flaxseed (optional, but it boots nutritional value and flavor, in my opinion)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/3 cup mini dark chocolate chips (or semisweet if you can’t find dark)

To bake:

  1. Preheat the oven to 375*F and line two baking sheets with parchment paper.
  2. In the bowl of a stand mixer, combine the oil and peanut butter on medium speed until smooth and creamy, about 30 seconds. Add in the sugars and beat until well combined. Beat in the vanilla and egg until the mixture is evenly combined.
  3. In another medium bowl, combine the whole wheat flour, flaxseed, baking soda, and salt with a whisk. Add this mixture to the wet ingredients in the mixing bowl a little at a time on medium speed until just incorporated. The dough will be think and crumbly – this is right! Pour in the chocolate chips and combine.
  4. Scoop the dough in rounded tablespoons onto the cookie sheets, lightly packing each ball to make sure it stays together, and placing them about an inch apart – they don’t spread very much.
  5. Bake the cookies for about ten minutes until the tops look slightly dry. The cookies may appear under baked, but that’s how they should be! Let the cookies cool slightly and them remove them from the baking sheet to cool completely.
  6. Try not to eat them all in one sitting!
