Magical Lemon Squares

You may be wondering why these lemon squares are magical… they are impossible to mess up, and they are my most-complimented dessert by far! Whenever I make these, my family finishes them in under 24 hours – they’re that good.


And they’re almost too easy to make. The bottom shortbread layer is only made of a few ingredients, and mixing together the top layer ingredients takes less than ten minutes!


After baking these and letting them cool, I dusted the tops with powdered sugar, adding a bit of extra sweetness to counter the lovely tartness of the squares themselves.


I love making these lemon squares if I don’t have a ton of ingredients in the house, because it only requires common ingredients like butter, flour, sugar, and of course, lemons!DSC_0235

Magical Lemon Squares

Prep time: 15 minutes

Cook time: 40 minutes

Yield: One 9-by-13 inch pan


  • 1 cup butter, softened
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 4 eggs
  • 1 1/2 cups sugar
  • 1/4 cup all-purpose flour
  • Juice of 2 lemons

To bake

  1. Preheat your oven to 350*F and mix together the butter,  cups of flour, and 1/2 cup of sugar in a medium bowl. Press this mixture into the bottom of an ungreased 9-by13 inch pan.
  2. Bake for 18 minutes, or until golden brown. While the shortbread base is baking, whisk together the 1 1/2 cups of sugar and 1/4 cup of flour. Whisk in the eggs and lemon juice, and once the shortbread is done, pour the lemon juice mixture over it.
  3. Bake for another 20 minutes, and when the bars have fully cooled after at least a half an hour, cut them into squares and dust them with powdered sugar. Enjoy!
